Sorry to be blunt but your idea is retarded and health damaging in the long run; first off you are going to need supplements for everything you loose from no meat and fish consumption (mainly B12,D3, creatine, carnosine,DHA and heme-iron, with the last being easier to absorb than iron and a reason why vegans are more prone to anemia). Furthermore you must eat nuts and bread especially whole grain and with seeds even better, is way less healthy than simpler carbs when it comes to metabolism like those found in rice or potatoes (try to at the very least make it your self to avoid the insufferable amounts of sodium) and prepare to feel bloated all day long. Legumes have a lot of the stuff you need but canned has always less nutrients than the dried stuff plus always try to find the lowest in sodium (not to mention all the preservative shit they put in). Dont do it anon just get a slow cooker and make everything into a stew (with some meat or fish included it's not like you need lots to function but cutting it out completely along with eating only bread will turn you into a tired and bloated skinnyfat). As for the greens and fruit go ahead it is something that everyone should eat the most along with grains. Also dairy.
