Based and Avery Island pilled.
It was originally intended as a way to preserve chilis so cooks could have easy access to that flavor and also some sour to balance it out and enhance flavor in other dishes. You can use it as a condiment if you like it, but that wasn't why it was created.
Oddly enough two of their better condiments are their sweet Asian chili sauce and their Sriracha which utterly destroys Huy Fong with a rich, deep flavor with lots of garlic and a balanced heat with none of that harsh chemical-y vibe. Huy Fong is only the standard issue you always see in restaurants because it's dirt cheap, easy to get, and never goes bad...
judging all Sriracha based on Huy Fong is like judging all charcuterie based on Armour Vienna sausages.
