Scientifically speaking (or physiologically) the defined period of time at which a person goes without food to be considered the start of a 'fast' is some 16 hours - this is when the bodies mechanisms start adjusting for the fact it is food deprived. As Ramadan is a roaming event in some months it does not count as 'true' fasting but in other months it does (as the period of time from dawn to dusk meets/exceeds 16 hours.

For some this is an established fact and observation - you have not made any intelligent insight at all. For other households this does not hold true. For some the breaking of the fast is a big communal thing each evening where the community gets together and you eat with neighbours - it therefore also makes sense that the increase is food is not necessarily because people are splurging more on average but because they are putting more effort into big meals for a community.

Total rubbish. The only thing that truly invalidate a fast from a religious perspective is to not be humble and sincere in what you do. The ones who complain about being hungry or demand that non-Muslims abstain in their presence are the ones who invalidate their fast.
