i'm an idiot and used a good example that i made a bit ago, actually this one was perfect because i went high class and used duck fat and truffle salt lol. I haven't actually had veal yet shockingly, is it supposed to look more "well done" since it's a roast?
pic related is what I just made, looks better than it tasted. Not sure what happened but it was a perfect rare/medium rare but the fat just wouldn't render and it was still tough as hell.

came out terribly, not sure what happened. I just moved and have been using my wok on an electric stove and it seems every meat i make on it is hit or miss.
