However, back in topic. Sometimes if it's a really fancy restaurant and I trust the chef, I'll ask them for a sample of each ingredient in every dish first. Always served raw. It let's you get a proper feel for the favour combinations and quality of the meat used. If you make sure to be extra loud and obnoxious when you order, they'll normally do this for free also.
