Stun the goddamn animal beforehand, these cuts leave the spinal cord and thus the ability to feel pain. Many of the time the animal is alive and very aware of what's happening for a long time (in the order of minutes) after they've been cut.

I say this as a guy who eats a lot of meat, there's no reason to be overly cruel about it. Stun the goddamn animal, electrically, rod to the brain, whatever.
