was hired as chef at a retirement community, worked there for a number of years. "Taco Tuesdays" was a big weekly deal for them.. I secretly introduced "soft tacos" & "street tacos" to them and they loved it, which pissed the indian head chef off.. they left trays of hard fried el paso gum cutters sitting on the table. They ridiculed the indian chef and he eventually left because he sucked and I switched the entire menu to a basic healthy based menu with some sweet cheats for the die hards..

I doubt the average Mexico born Mexican has a wide knowledge of Mexican food. Just what their family makes and what local restaurants have.
