I do mine two ways. My favorite is to use clarified butter as the oil, then I'll add like 1/4 teaspoon of white truffle oil to the butter I'm gonna put on top. The other way I make it is by popping the corn in bacon grease and adding some powdered cheddar after it's done. Wa la

Cut into two inch chunks with the skin still on. Boil the chunks in water until a fork can easily pierce the outside but the center of the chunks are still hard. About five minutes. Make sure there is Salt and a bit of white vinegar in the water. Drain them and then add duck fat and salt. Enough duck fat to coat everything and then some. You could also use bacon fat. Mix everything with a metal spoon to rough up the outside of the potatoes. You want a kind of slurry of fat and potatoes covering everything. Then put in a 500° oven and flip them around with a spatula every ten minutes till they're done to your liking.

For best results bake some eggs on top of the potatoes after they're done. Add melted cheddar and hollandaise. Then you have a god tier breakfast
