And it's my opinion that most dishes have reached an acceptable final stage in their conventional form for people that actually like the food. But we have a huge market of people that don't like the food they eat and they are always trying to improve on it.

This leads to a backlash against 'picky eaters' that are actually very happy with the dishes they normally have, by people that just don't like anything very much.

How does this disprove my theory about people not liking the food they cook so they try to change it up?

Given the economics of cooking for one I tend to have the same meal a few days in a row. I've never cooked myself a meal that I didn't at least like a lot. Most of the time I'm eating my favorite foods what more could you ask for?
