OP, those are some horrible looking non-kosher, pork-chicken dogs. Disgusting toppings too. Oily onions on top of untoasted stale buns. Is the meat even cooked? Or boiled? Is that a tough arugula stem there.

I'll take an icelandic hot dog over your mess hands down any day.

If it's for coworkers but no one at all is bringing one single item for "potluck" then I guess you need to consider this person for the grill. Otherwise, ask them to bring what they like. Play dumb and put the ball in their court to bring a dish.
Go buy some vegan hot dog package, and buns, or a slab of tofu to marinate, and be sure to cook it first while the grill is clean of animal products. Keep warm in foil or something like that.
You could make sure the baked beans are vegetarian if you wish, or make 2 batches.
Buy a box of taboulleh salad mix from Near East, and just make it per the package directions, adding 4 tomatoes and 1 large hothouse cucumber. Hit with some lemon juice right before serving. Or marinate some simple canned chickpeans, if nothing available in your deli.
If you want to be very considerate, have a vegan hot dog topping, homemade like marinated purple onions, or lime-pickled jalapenos (sugar, lime juice and a red fresno pepper addeed to a jar of drained pickled jalapenos). Jar of piccalilli like like Howard's hot or mild peppers. A crudite platter that has hummus not just a mayo based dip will help. Everyone will enjoy these items too.

I have been enjoying a couple purchased condiments lately:
-Blue Plate Spicy cilantro (instead of mayo)
-Duke's White BBQ, which has a hint of horseradish in it, so love it with a roast beef sandwich.
-If you can find it (because I can't find it in FLanymore), is the Hellman's organic Curry mayo which is a copycat of the chicken kitchen/pollo tropical mustard-curry sauce. I like to add a little to my plate when getting a rotisserie chicken, or making a chicken pita wrap.
-Lao gan ma (but an american version)
I use a lot of hot pepper jam and Howards hot piccalilli relish. From hot dogs, to burgers, to a garnish for cheese. I make a homemade chimmichurri or zhoug often.

If a burger is char-grilled and otherwise nicely flavored with a good sear or nice smoke, plain is just fine. A good pretzel roll, like pictured, carries it's own flavor, as does butter toasting the interior. Mustard is just fine, though I think Lizano or pickappeppa, or even A1 is more complimentary to a non pork product, than mustard. Mustard also screams for dill pickle relish.
Me, personally, I'd want some mushrooms or grilled onions,maybe a slice of funky cheese. Barring that, bring on the salad toppings, some slab of ripe juicy tomato, smidge of mayo to make the juiices run on that tomato, shredded lettuce, crunchy raw onion. On a BBQ burger, with actual BBQ glaze on the grill, gimme some bread and butter pickles. I'm a pretty big fan of Howards hot pepper picallili.
