About a week to figure out shit then a month of consistently tasting bad to great espresso daily. I'd pull a shot and stare at this image while sipping. I got a v60 a few months after that and that just widens you window of error so much its not even funny. From time to time I'll completely fuck up my recipes or remove/swap out "techniques" and still get pretty good coffee. Unironically the thing that gave me the biggest pourover "level up" is the stupid melodrip lol. Bought it last march, use it 9/10. Just look at how nice and even that origami is compared to other pourovers in the bingo.
