For Mexican style I like San Luis Hot Sauce or Cholula.

For non-Mexican I'll use whatever's available as long as it's not one of those sweet / fruity hot sauces.

This shit is SO FUCKING GOOD for a mild sauce. It's like a tangy and lime-y extract of cascabel and puya peppers, super flavorful and good on EVERYTHING.

Valentina or Valentina xtra hot is not only really good but cheap too. Pic related is even better but you're gonna have to search for it.
