Trois Pistoles at a dimly lit jazz-oriented dive with more taps than customers - just past the golden hour in early autumn, with a fusion five-piece doing Brubeck dirty in absolutely amazing ways that only you, the beer, and 20 other people are around to witness. Unibroue beers will, from this point on, flood your mind with memories of sounds, smells and sights, but Trois Pistoles will give you a crystal clear reflection of a fantastic moment that should have been caught on film, or at least an SD card.

I don't know if you'd like them, but I like and recommend Unibroue a lot, especially Trois Pistoles and Maudite (not quite Belgian, but basically Tripel strength Dubbels). Dieu du Ciel's darker beers, like Peche Mortel and Grand Noirceur are great... and as far as IPAs for people who don't like IPAs go, I'll usually offer a Collective Arts' Ransack the Universe - it's like a missing link between hazy/juicy IPAs and beer. It's hoppy without being overly bitter or piney; fruity without being juicy; interesting, but it still tastes like beer... it's like instead of a grapefruit fight in a pine forest, it's a pineapple and guava fight on a beach... despite the long explanation it's still a distant third.

I'm pretty sure they (Smithwicks and Kilkenny) were the same beer at one point.

Anyway, this. I haven't seen it around in forever, and they'd better still be making it, but it's everything I want in a beer. I'm making a girlier version of this beer for the meat-wrapped soggy vagina currently hogging my bed. It's a shade lighter, and so far has hints of pear in with the belgie banana yeast, but a sixpack looks like it should drop a bull moose mid-stride (9.3% if my calculations are correct), which is perfect, because I like my beers and my women heavy.

I got myself a handful of these happening tonight. I'm also giving the girliest beer I've ever made a pre-conditioning test run... lightly hopped blackberry wheat beer. I really hope my girlfriend likes it, or I'll have to get a boyfriend.
