does swiss cheese work on pizza? Something like gruyère or emmantel. I know it isn't normal but seems like you'd get more kick than w mozzarella but its mild enough to not completely fuck shit up like Stilton or 3 year vintage Gouda.

What do you think about swiss on pizza? And what other cheese might be good on it?
