out of the superhots, the ghost pepper has the best flavor (and lowest heat). at least to me. above it, you get bitter and perfumey more often than not. im not talking citrus bitter just full-on bitter. pic related i sauteed with garlic and oil for garnish and they were bitter as a motherfucker, despite my having grown them with the utmost care and strict organics. the ghost pepper is genuinely tasty. i suggest you try them dehydrated to get a better sense of the flavor

pickled eggs
get some vinegar and cloves or just a pickling spice thing
i like to use superhots also. the pickling calms them down a lot and the eggs will be vicious but absolutely tolerable
