I wasn't a fan of slow cookers until I got a tiny 1.5 quart one. Brisket may not be immediately "poverty" food, but you can cut it into quarters, freeze 3/4 of them, and braise the remainder. 1.5 quarts of brisket will make you around 2 dozen tacos. Come home, heat up a cast iron skillet, shred the bisket, heat the tortillas, garnish with onion and cilantro and hot sauce and a lime on the side. So satisfying and easy. Add some cucumbers and radishes on the side. Maybe get a rice cooker and make some steamed rice with a packet of sazon and/or chicken bouillon/broth.
