I grew up in a fishing hamlet so I naturally a lot of fresh fish. I'm convinced a lot of city dwellers who say they don't like fish simply never had a fresh one. Go to a fishmonger or even a local fisherman and get something that's still moving.
Fish is easy and quick to cook too. Boil or steam some cod or plaice for a few minutes and have them with some new potatoes and, I don't know, a white mother sauce with some chopped parsley maybe? Melted butter?
Breaded and fried fillets of those two are great as well.
Or grind up some cod with an onion and form them into egg-sized spheroids. Fry in plenty of fat. No, they won't absorb a lot of it.

Those are my main local fish. It obviously varies. We get dover sole too and I like that just fine, but it's generally just a lesser plaice, and a bit more of a hassle to fillet if you're doing that yourself.
Others already said trout or salmon wrapped in foil or with a salt crust. Takes longer but it's still easy and delicious.
