Keep stirring constantly or it will catch and burn. Add extra oil if you need to. This is a critical step, BTW. You want to cook until the onions go translucent.

I actually think this is the most tricky part of cooking the gumbo. Here it can burn just as easy as cooking the roux alone, but you absolutely need to do this step otherwise the texture will be wrong later on. Keep cooking until the onions are translucent. Stir often so it doesn't stick or burn.

Sweat down the veggies in the roux until the onions go translucent. This is a critically important step! You need to fully sweat down the trinity, and you need to make sure it doesn't burn. Stir very often for about 10 min.

This part is critical. You want to sweat out the veggies in the roux. The veggies need to be thoroughly cooked, but you don't want it to stick and burn either.
