put 150g white sugar and 50ml cold water inside a cold pan. make sure all the sugar is well wet.
turn on heat, untill bubbling. don't be a retard and let it on max heat, but you will want to keep it bubbling until it changes colour.
DO NOT TOUCH THE SHIT UNTIL IT CHANGES COLOUR.

beginning colour chaning phase, after you let it sit without touching. you can start stirring with a wooden spatula once it's caramel colour kinda like >>19833228 colour.

add a table spoon of lemon juice or white vinegar. this step is crucial otherwise your caramel will harden and not stay liquid.
stir well to incorporate the acid.

finally you will add 50ml of near BOILING WATER. stir well, don't wait too long (<3min) to pour in a bottle or jar. let cool.
