You would be cross contaminating the sink and every other shit if you wash you cutting board after cutting the meat anyway.
Washing meat is necessary to remove any non organic contamination such as weird chemicals, gravel, dust, and some organic residue such as spit, mucus, cum, shit, etc.
Would you eat a piece of meat with literal dust and cum on it without washing it?
My uncle is a butcher and let me tell you they don't handle beef nicely and they do occasionally spit and put snot on it. That would not get removed with merely cooking it
