this is good. i'd add some peppercorns, chinkiang vinegar, sesame oil, fermented bean paste, dried mushrooms and dried chilis, hoisin sauce (you can make this at home too, its better fresh imo), toasted sesame seeds, star anise, fivespice

only thing i would change is swap pic related for sriracha. i think it's just a better stronger tasting sriracha.
but stuff like kewpie, el yucateco, shichimi, lao gan ma, msg, all that stuff is essential for what i cook

They're not the default everywhere, just in the English speaking west.
Europe has different defaults, you'll find oil and vinegar in a lot of places, sometimes other spices like cumin. Mustard or mayo is common.

Asia has a tonne of different "defaults", basically every country has its own default condiments.
China has different defaults in different places, soy in the south but vinegar in the north, xi'an has pickled garlic on restaurant tables. pic related is everywhere.

This shit right here. Only found it last week (yes i'm white).

I eat the chili straight out of the jar. So fucking good.
Makes great spicy popcorn, chicken marinade, soups, pork belly, anything.
