"Zampone" from northern Italy. Mixture of pork meats ( shoulder, nose, ears, lard, skin) and spices stuffed into a pig's foot's skin, to make a sort of big sausage. It's traditionally eaten around christmas and new year's. And it's amazing. Name means "Big animal leg".
