It's just weird still to list all the other technicalities and not the technical roast. My only guess is so they don't have people REEEEEEE if when they get a bag it's not exactly said specified roast, and instead leans to one side or the other.

Yes that's what that means.

Incorrect. Almost all brew methods use some kind of filtration be it metal or paper. When most websites list filter coffee it means its coffee that gets brewed through some kind of paper filter; and can also mean coffee brewed akin to pour-over or auto drip. Brewing coffee through filter effects the taste and usually produces a cleaner cup. I wanna say the filter also helps highlight more acidic tones, but I'm not 100% sure.

That's kinda confusing cause normally a brew will come out leaning one way or the other. If sour it's being under extracted, and if bitter its being over extracted. What this anon >>17359676 said sounds about right. I've never measured out my coffee or water for moka pot to fix an issue with it. The one trick I try that seems to fix my issue is after I have leveled off my basket with a butter knife, I stick it in the grounds off center to make a slit, and then brew it as normal. That seems to fix my issues with the brew coming out wrong; especially sour notes. Pic related.

One last important thing, I'm assuming the roaster grinds the coffee right before being shipped so its fairly fresh once it gets to you. However, coffee beans, especially ones that have been pre ground, loose moister and change composition wise. This might be why your coffee isnt brewing the same. The knife trick might fix this, and no the slit doesn't need to be as big as shown in the photo.
