Why are American cheeses so fat-laden and protein-poor compared to European cheeses. You can really see this when trying to melt them. European cheeses don't melt as readily. They burn before they melt. Any America-style cheese will melt all over the place and never burn or burn very little because it's mostly fat. Why is this?
