You only need one egg and 4-6 ounces of breadcrumb (by weight) for 2 lbs of meat. When mixing, don't overwork the meat. When molding, make it nice and compact. Molding it in a small pan (like pic related) helps it keep its shape. Don't cook it in that pan though, otherwise it'll burn.
