I did some autistic googling a while back. Based on the locations that show up in other videos on the channel, I think it's in sewa nagar market in new delhi. If you look at page 17 of this presentation, they talk about new stalls being set up there: https://www.slideshare.net/ManushiIndia/history-of-sewa-nagar-pilot-project
You can see the hexagonal mesh and just about see the curved cross brace in some parts of the original video. It's entirely possible that's a common stall design all over India, but that's the best I've managed to narrow it down.
