Just try out different styles... you'll start to notice where they deviate in ingredients and methods and can figure out target flavor profiles as you get better. For simplicity, I'll just use soup/stew interchangeably for this post. Pho is a lot easier than most people realize, and you'll learn little things along the way in making it (browning bones, charring onion prior to adding). Borscht is another good one to try. Chicken soup, split pea soup, clam chowder, and tomato soup are all VERY easy. More complicated ones might include tonkatsu ramen, seafood gumbo, and maybe some of the Korean soups. Look up some of those and try them out. The easier ones tend to be cheaper if you're strapped for cash. One extremely cheap soup that seems to fly under the radar is French garlic soup - it isn't SUPER technically demanding but I wouldn't call it the most basic either. Link below. Good luck, anon.
