There's sort of a thing called "food literacy" which is the ability to discern good quality foods form bad "junk foods". You just have to motivate people to make proactive choices and remind them of how genuinely dangerous bad nutrition is not just for them but for society.

I think one problem especially in America is people don't feel a sense of social responsibility for being fat because there's no publicly funded health care system. It's actually more in the interests of the American medical system for people to become fat and overweight and need medical support. Because the medical system is for profit and not non-profit there's little motivation to encourage people to eat healthy either.

Also the food lobbyist industry in America is disgustingly powerful. Between McDonalds, Wal-Mart, and Coca-Cola the guys with the most money to sway legal laws about food are the biggest suppliers of low-quality food to Americans.

Everyone shits on American food because it's so consistently low-brow and lacking in any kind of elegance or pedigree. Sure you have bakeries in LA that have been using the same sourdough starter for a century, but fast food and processed foods dominate the "average" american palette.
