Ugh. I really like tamales but I have issues. I can't use lard because my wife is against that, vegetable based crisco I found out I'm allergic to, and olive oil or coconut oil just gave me bad results. My only solution was to make them into muffins which while retaining all the taste it loses texture and just isn't the same. Does anyone have a good solution that can satisfy all parties?
