If you're getting sour coffee from your pour over just adjust the brew, why the hell would you buy a new device? If you're only getting store-bought they you'll need to find something finer, probably something specifically saying it's for pour-over. No new device is going to compensate for you using the wrong grind size and water temperature.

also in general, for light roasts I use water just off boil, for medium roasts i use around ~203F I dont drink dark roast, but if i did i'd probably try somewhere around 195-200F

sounds like a fairly balanced cup- it would seem that if you feel its underextracted you would go for a slightly finer grind though? or perhaps it could use better extraction through the pouring method. i would just make good note of your current recipe and refer to compass if anything else to see where you're trying to go

do what works for you but remember that extraction is only one part of what goes into a brew. grind settings and temp control to a lesser extent are important too. i'd say give those methods a try while experimenting with different grind settings if you get bored
