Borscht, it's cheap and lasts me 1-2 weeks, think my pot is about 8qt but I can't remember, best thing is the flavours meld and get better with a couple days in the fridge. Total cost is $30-40 depending on what I put in but it's brainless to make and great with dark bread. Irish stew is also a good choice as then you can use cheap, tough cuts of meat and they turn out fantastic, just don't forget to sear the meat first for best flavour.

Honestly under appreciated

I didn't think I'd like borscht as much as I did. That sour cream mixed in makes it. I would throw in some meat if I ever made it myself. Maybe some pork pieces.
