You gotta shape it into a circle before the last rise by grabbing the edges and pinching them into the middle. Flip it over and tighten it a bit by cupping both hands under from the sides and rotating a few times. Then you can methodically stretch it out by working gradually and symmetrically.

Shape the dough into a ball by doing that cupping and twisting thing, then let it relax for a bit so that you're starting off from a nice even round. Then press it out really gradually, rotating it around robotically so you're only ever pushing it by a small amount in each direction. Same with the stretching, take your time and let it rest on the counter if it's pulling away too fast to control.

It's just bread, usually with a splash of oil. Make a pile of flour, add spoonfuls of yeast, salt and oil, mix in water until there's no dry flour left. Shove it around until it's smooth and leave it alone for a few hours. I usually make it in the morning, because if you let it sit for most of a day you don't need to bother kneading as much.

If you want grams, it'll be something like 500g flour, 300g water, 10g each of the other things.
