Smells so good guys, wish I could share this food with all of you. Meats and veggies cooked, about to deglaze and add the rice. Should be done in less than one hour.

Just curious, would you detract points if I shred a little habanero cheddar on the finished dish? Not really traditional but cheese is good w jambalaya.

Never heard it called this, sounds like a western coast thing. I've always heard it called either frito pie or more commonly frito chili pie. The only place i've seen it put directly into the frito bag is at a few highschool football games, it works fine though. I enjoy it most from either one of those fry/nacho boat things or from a normal bowl when at home.

Texas here, from what I understand its everywhere here and fairly common in Louisianna, Oklahoma, and perhaps new mexico. Correct me if I'm wrong, but from my understanding its mostly a south central USA thing and isn't done much elsewhere.

Alright guys. I was back in hometown last weekend and got some god-tier beef sausage, probably a pound of it. Made fresh in the butcher shop and smoked in store, still wrapped in butcher paper. I haven't used any yet because I've been drunk and busy and forgot about it in the fridge.

What I want to do is use it for red beans and rice. I've tried to make this one time and it kind of sucked, usually I use the Tony Cachere's box mix, its only $1. And I have two boxes in my pantry.

Before I waste this quality sausage on a box dinner, I'd like your input. Can you give me a really good red beans and rice recipe? Even an acceptable red beans and rice recipe would work. I have the rice and beans. I'm thinking I need to use this sausage by this weekend, I bought it fresh and don't know what the fridge life is on it.

Also, I'm open to suggestions as to how to use it other than red beans and rice. I just need to use it and would rather make a dish with it rather than just cook it on the grill.

I used to be literally poor and would take sips out of a jar of Ragu pasta sauce late at night to stave my hunger. Also, (insert sauce or condiment here) on saltine crackers.

Back at parents on a holiday, they leave for a couple days. Stoned as all fuck. Hungry, looking in fridge. Boudain, excellent. Plop three on a plate and nuke. Get hungry while they cook, dig icecream from freezer and put in a bowl. Boudain is done now, open microwave and set them next to icecream on the counter.

So stoned, such munchies. So starved. Yet see the truth in what is before me. Ponder the sub-par pig liver and cheaply spiced rice sausages stuffed into its own intestines. My gaze wanders to the frozen sweetened and artificially flavored conglomeration of a distant mammals tit-milk. My hunger dissipates and I crack my neck in disgust and horror. Full fledged bad vibes and paranoia at that point, the fact that we exist as we do as a species disgusts me to tears.

>wake up next morning

boudain and icecream are still on the kitchen counter. Toss the bowl of icecream, it's melted and bad. Proceed to devour two boudain links.

how.....how have I never thought of this? Mother of fuck, this is like an epiphany. Ok so most gumbo is served over white rice. What if, what if the gumbo were served over crumbled boudin or dirty rice instead? I can't believe I've never thought of it. Next time I make gumbo I'm cooking boudain instead of white rice, slicing them open, crumbling them, and serving my gumbo over the boudain. Fuck, I'm actually excited to try this, it has to be awesome.

Pic sort of related, I made a gumbo thread last night about a prime rib gumbo I had. It was awesome, beef gumbo needs to be a thing.

Guys, do you eat gumbo? I love me some gumbo. I'm used to the standard fare of seafood gumbo, chicken and sausage gumbo. It's great. But earlier I was at a restaurant that had the option of a prime rib gumbo. Beef gumbo? Want.

It was fucking great, almost like a beef stew but better because its gumbo. Added a dash of file powder and Crystal and I was good to go. I'm going to try making a homemade beef gumbo now, I didn't know it was a thing but it is a thing and I'm making it my thing. I would suggest you try it. Just wanted to make a thread about this.
