Our old dog would suck on the swineears instead of chewing them so they turned into a white floppy stinky mess.
I never tasted them but the smell wasn't very inviting, to be honest.

Man, when I was a kid the town I grew up in, maybe 600 people total, would every Summer have a football (soccer) tournament where the different streets competed against one another. Some streets and roads were small so they got together several to make a team but whatever.
A 3-4 day weekend of everybody, big and small, playing football and drinking beer and then it ended with a big feast with whole roasted pigs.

Why the hell did we stop doing that?

The ones in the cages, but they don't taste as good, IMO.
I bough one or two whole pigs a year and butcher them myself. I buy them from a farmer who farms them "extensively" and I select them while they're still piglets so I can come and visit "my pig" until he's grown. It's nice for me, it's nice for the pig because I usually bring a treat, it's nice for the dog because they usually get along quite well, and it's nice for my niece who gets to pet the wet snout and learn where the chops come from.
I don't think it's actually possible to meet current demand for meat with this type of farming, though. Same as how cutting out all GMO crops and pesticides would result in terrible starvation across the planet.

Pork is objectively and in every conceivable way better than beef

Beef and lamb are popular menu on many steak houses.

But how come pork steak are so rare? Aren’t pork more economic than beef or lamb? Aren’t they as good as the others?
