The Modernist Cuisine series isn't a cookbook in the usual sense, their aim is to be more like a scientific reference or an illustrated encyclopedia.
Lots of charts and graphs and so on.
They also spent a lot of time and money cutting equipment in half and gluing high temperature glass panels to it so they could take detailed cut-away photos.
In other words it's like having every chemistry segment of Good Eats in book format.

Still only worth the money if you run a school library or something but at least it's with decent reason.

Hey /ck/ what are some good online resources for learning about food science? I don't mean nutrition - I'm more interested in learning more about the sort of reactions that occur while cooking various dishes and how those can be manipulated.

I love grilling. Where I'm at right now there isn't a practical grilling option but normally I will grill a bunch of chicken breasts and use them for sandwiches through the week.

I don't like baking because I can never get the juices to stay inside. Counter top cooking for the most part too. But on a grill it always tastes better.
