the tipping system is weird and often silly, but it's the system we have in the US. in the case you mentioned, if you're rich enough to spend $1000 on a bottle of wine when you're dining out, you're rich enough to tip well (if the service was great). the waiter or waitress is spending his or her night to serve you, meanwhile you're sitting there sipping a $250 glass of wine. their night fucking sucks compared to yours, but you can make their night if you tip well. so you're either a) the nice rich guy who tips well and who will always get a table/great service/special requests or b) the stiff who comes in and buys expensive shit and doesn't tip well.
