The hell am I reading? If you're deep-frying and not pan-frying just make sure your oil never gets above 375, otherwise full pieces will burn before they're cooked through. Make sure it's a consistent 350 if you're a lunatic if you fry entire chicken quarters instead of taking off the wings and drumsticks.

Wing prices are actually lower for restaurants right now, but people are willing to pay/buy less than before. Previously wings were in crazy demand which is what kept prices high.

Why chicken prices as a whole are high is a different matter. A lot of it is truckers, oddly enough. They're suffering. This may not seem related but it is. They provide feed to the chicken. Then they move the chickens to a slaughtering facility. Then the parts to the restaurants across the nation. Not to mention other ingredients. This can jack up the prices significantly.

I think a lot of people just don't feel like firing up a pot of oil at home because deep-frying regularly leaves a layer of grease everywhere in the home, even on the ceiling. Anyone that cooks knows that shit goes everywhere. I've got a granny in-law that invested in an electric pot just so she can fry outside.

Eating some leftover chicken I fried last night. Corn is out of season but I really wanted some so sadly I had to settle for flash-frozen.
