Hey /ck/, in about 2 weeks I'll be starting a position as a cook in a group home. They all have special diets but the managers told me I have complete creative control when there isn't an audit. There's about 12 people for me to feed and I was wondering what awesome dishes could I put out there that the consumers and the staff would enjoy? Keep in mind that the food should be healthy, however (good) fatty is acceptable.

Hard mode: Nothing fried, spicy, or laden with cheese/bread (ie chili, fried chicken, mac and cheese)

I have thrown things together such as a soup with ground turkey, sweet potato, egg noodles, onion garlic, carrots, celery. Ideas?

I'm cooking some ribs in a thai curry broth I made.

What should I do with the broth after the ribs are done cooking besides throwing it out?

Making it with some jasmine rice, bok choy, and potatoes.
