why not bro? I don't even measure shit and mine turns out perfect

>lay down plastic wrap
>layer of salt and a few pinches of peppercorns, sugar and juniper berries
>layer of dill stems
>fish with the skin down
>shitload of salt covering all the flesh
>more peppercorn, sugar and juniper berries
>the rest of your dill
>wrap that shit up tight in the plastic wrap
>put in container
>put another container on top
>stack tons of heavy shit on it

I usually go for 2-3 days

>take it out
>wash all that shit off
>sprinkle dried dill and black pepper all over

and it's ready for my cream cheese sandwich

also I forgot

chicken thighs are bone in skin to save $20 dollars
after 2-3 hours, remove chicken thighs and debone them
remove skin optionally too because your may be too thick with the added tbsps of fat from the skin
