Tfw I just made the cheesecake for the second time thinking it would be perfect this time (last time I removed the springform too soon and the cake fell apart when I tried moving it from the springform to a plate.
I made everything and it was all going well consistency was great, put the water bath together, lined springform with parchment I cut in a strip to wrap around the circumference so the edges could (hypothetically) come out super smooth.
>put perfect cheesecake batter in springform
>put springform in roast pan and fill with water same as last time
>put in oven for 10 mins at 425
>take it out and reduce to 250
>put it back in
>go sit back down at computer thinking WA LA
>suddenly hits me I forgot to wrap springform in tinfoil
>mfw
>nothing to be done so I just let it keep baking and take it out after the 45 mins
>take it out of roastpan and its dripping wet from the bottom even after moving it to rack to cool down
>jiggle it about in springform and see the crust at the bottom
>can tell its absolutely soaked and mushy and ruined
