Another cook here. Im assuming he was classically trained. Or in his 50's-60's correct? Either way, the plate is a canvas, the food is the picture. That red area is the frame. Dont paint on the frame man. It just looks sloppy and gives off a careless vibe. Especially in your at a fine dining place.
