those places usually have massive fuzzy logic rice cookers and don't have any scorching on the bottom. i've never in my life seen a cooker like that, but i don't trust any company that isn't asian. Pretty much any home rice cooker is going to scorch the bottom unless you're really vigilant about unplugging it pretty much as soon as it's done cooking, but all of my asian friends opted to just skim the soft rice, unplug the cooker, and then scrape the browned crispy rice from the bottom into a bag to snack on later. No waste!

2nding this post, my mom always taught me to get beans to a strong boil and stirring around for about ten minutes before setting the stove down low.
