I have a few question:

Is adding sugar/butter to carrots bad? and by sugar I mean like half a teaspoon to a pan of carrots with water, then boil them for 20 mins. Drain, add a small knob of butter, salt/pepper.

Using the excess water/fat from a cooked piece of meat, for example a chicken, to make gravy is the correct way?

Cooking roast potatoes in a tray of animal fat or oil is the correct way?
