I just throw in some sausage spices:
500 g half pork half beef mince
1 finely diced onion
2-3 blended sandwich slices depending on how fluffy you like them
1 egg
A hand full of chopped parsley
7 g salt
1.5 g black pepper
0.5 g white pepper
1 g paprika powder
0.5 g mace
0.5 g allspice
0.5 g ginger powder
0.25 g cardamom
0.15 g coriander

Just mix it with your hand until you have a nice binding, form 100 g balls and fry them in clarified butter.

Make Frikadellen/Bouletten instead. More browning.
The key is always not using bread crumbs but fresh bread that still provides some moisture. Also the seasoning is important.

My Frikadellen recipe.
500 g pork and beef mince mix
3 slices of blended toast
1 large egg
1 large finely diced onion
8 g salt
1.5 g pepper
2 g paprika
0.5 g mace
0.5 g dried ginger
0.25 g allspice
0.25 g cardamom
0.15 g coriander
A handfull of chopped parsley.
Knead (maybe add some water if the mass is too dry but this shouldn't be the case), form into large balls and fry them in clarified butter.

We have it in Germany too, but it's way less common as frikadelles, which are big meatballs. Ingredients are basically the same although frikadells are often stronger seasoned and have wy more crust because of their smaller size. Also meatloaf is often served with a thin gravy while frikadelles are eaten with mustard. Both can be heavily improved by adding typical sausage seasonings but many keep them as simple as it gets, which makes them boring.

Take the frikadelle pill.
Ground pork or pork/beef mix, toast soaked in water or milk, egg, onions, garlic if you like, lots of salt and pepper, mustard, maybe marjoram and chopped parsely.
Just fry in lots of clarified butter and/or oil.
