It's been years since I moved to the US from Japan for school. I always feel reluctant to tip at restaurants and most of the time I only do it because I don't want my friends to think I'm a cheap ass. I don't understand why it's almost a requirement to leave a tip here.

Back home I would only leave "tips" at local family owned places I regularly go to and personally know the owner.

Side story: When I was a kid, my favorite part about dinner was setting the table. I think it was the routine I fell in love with. Counting off spoons and forks by the number of people in my family, saying their names in my head as I set them by their designated seats. "Mom, Dad, Shawn, Sue, Steven, Me."

Eventually, my parents got divorced and my family was split up. Boys with dad, girls with mom.

I cried harder than any other time in my life when I went to set the table for my mom and my sister, and I realized that I would never count off my dad, Shawn and Steven as I passed their seats again.

It's been four years since then. I'm in college and I live with roommates and we eat dinner together like a family every night. I think the reason I enjoy cooking so much today is that it gives me a semblance of my childhood, and I get to count off the names of my family again. "Michael, Sarah, Alyse, John, Peter, and me."

I used to eat this all the time:
>Cook in boiling water with an egg or two (not in shell)
>Drain all, be careful not to break the yolk
>Put 1/2 of the seasoning and all the dried vegetables
>Mix with a bit of soy sauce
>Eat

Then I got diagnosed with hereditary hypertension. I miss ramen.
