Don't really browse here, cooking Portuguese style octopus to impress a cute Açorean girl I met, any way I could severely fuck it up?

Basically, it gets boiled for 40 min with bay leaf and salt, then goes into the oven at 350 with potatoes. You just put some bay leaves and garlic under it while baking along with salt and pepper.

I made some sauce on the side that seems like some sort of take on sofrito verde, its actually pretty good.

I just made cranberry/white chocolate scones and the recipe I was using said to do a "milk" bath (like an egg wash, except with milk).

What does putting milk on top do to it? After cooking it for 20 minutes at 400 degrees, it doesn't look like anything special.

Is this just a britbong thing or what?

When I leave a baking tray to soak overnight, and the water is greasy, is that acceptable to pour down the drain? I wiped as much of the grease off the night before, but I get the feeling that inevitably some fat is going to have to go down the drain
