damn, good as hell OP. I like making Indian food a lot, it just takes me a lot of time so I rarely do it. I also probably don't do it the most traditional way, like I used a tortilla for roti. But it's so versatile, I feel like you can do so much with these flavor profiles.

Do you ever make coconut rice? Pic rel was the last time I made it like 3 years ago during covid.

I don't know if there's a single dish in particular, but what I think I'm better than most at is improv.

I rarely use recipes and just kind of throw things together. It makes it difficult to repeat dishes, but given an open canvas I can do pretty great.

We were at an air bnb for a birthday party and had limited equipment and a small grocery store near by. I was able to throw together a smokey coq au vin and gumbo for like a cajun themed dinner. It was kind of insane how good it was, multiple people at the party kept telling me it was ridiculous, so that felt really good.

Attached is an impromptu indian dish that I made one day when I was craving indian and had no restaurants around. Flour tortillas are pretty good as roti.

Last thing I made was fresh pasta and porcini mushrooms with white wine sauce. Last thing I took a pic of was some indian food I made.
