If you like it, good for you. It would not be servable in a restaurant setting, and I would eat, but certainly not pay. The magic of prime rib is the differing textures of the different muscles all being cooked to the same perfect temp with gooey intermuscular fat. I would refrigerate, slice and make cheesesteak out of that. But, different strokes and it takes all kinds.
