I'm a huge shaving autist and I wish you could eat the lather. It looks delicious when you get nice peaks.
If you get a sample pack of blades I suggest you write down your impression of each type for later. What works for one face might not work for another, so it's not just a matter of buying the sharpest one (which I believe is still Feather)
Dorco ST-300 is the sweet spot for me personally. Nice and cheap too.

They're not as difficult or dangerous to use as people think. I guess everybody gets a nick the second time he uses one because he gets cocky, but if you take your time and pay attention to what you're doing they're great.
I prefer a safety razor because it's faster for me but if I have a full week's worth of beard it's usually easier to take off with a straight razor.
You can get those for regular razor blades that you change, by the way, so you don't have to deal with stropping and all that.

Switched to safety razors and occasionally straight razors (when the beard is a week plus) about 2 years ago and I'm so damned glad I did.
The blades are pennies each, and you can get straight razors that use them too.
The shave you get is extremely smooth and perfectly safe once you have the technique down. Someone once said to me you will cut yourself the second time you use a straight razor, and that's exactly the case; first time you're careful, second time you think you know it all, third time you realise that you don't.
Plus it's a nice relaxing little ritual in the bathroom where you just take some time out of the day to groom yourself. I used to just shave in the shower with a Mach 3 but that extra time and care can really feel like a treat if you think of it that way; don't think of it as time wasted that you could be spending refreshing /ck/ but rather as time that's just for you to wind down and not be in a damned hurry about nothing important.
Get a decent badger or boar brush, doesn't have to be expensive. Soak it in warm water while you take a shower. If you use a soap puck instead of a paste-type soap you may want to "bloom" the soap my leaving a little water on top of that too.
After the shower take plenty of time to work up a nice later and really work it into your face. The great thing about the soap/brush instead of shaving foam from a can is that you can really work it up under the hairs. Makes for a much smoother shave even if you do still use that overpriced Mach 3.
A proper shave is three passes. You can look up a video or something on how to do that. Take your time and remember that it's a treat, not a chore.

I guess the straight razor of cooking is the mandoline so maybe the safety razor is just a decent chef's knife or Chinese cleaver.

I switched to straight- and safety razors that use those blades instead of the Mach 3 about a year ago. You can easily get a good smooth shave with them, it's not nearly as difficult or dangerous as people think, and it's MUCH cheaper.
There's also a wide range of different blades you can use so you can find the type that's right for you. Dorco blades work for me. Feather are too sharp for my face but I guess there must people who prefer them.

I use a safety razor if I shave daily.
If I let the beard grow for a while it's much easier to take off with a straight razor, though.
You can get one of each for like three bucks on eBay too so there's no excuse.
