i honestly think rice and beans are great, love them, preparing rice and beans from scratch can be very affordable, i personally don't think an all vegetarian diet is good for you so try add some eggs and perhaps cheese, you probably know this buy try comparing price to quantity and see what gives you the best value for the money, counting the portions of all my food saved me several times because i could then divide the portions of food with the remaining days until the next handout, best of luck
